Galbi Ingredients

  • 2 Chicken thighs (boneless)
  • 1/4 stalk Scallion (white part only)
  • 2 cloves Garlic, minced
  • 1/8 Onion, minced
  • 1/2 Red chili pepper, minced
  • 1/2 Fresh ginseng root, minced
  • 2 Asparagus spears
  • 1/8 Small pumpkin
  • 1 handful Baby greens
  • 1 Tbsp Soy sauce
  • 1/2 tsp Sesame oil
  • 1 pinch Salt
  • 1 pinch Sugar
  • 1 pinch Black pepper
  • 1/8 Pear, pureed

Oriental Galbi Sauce

  • 5 Tbsp Soy sauce
  • 2 Tbsp Olive oil
  • 1 Tbsp Lemon juice
  • 1 Tbsp Honey
  • 1 Tbsp Sesame oil
  • 1 Tbsp Toasted sesame seeds
  • 200ml Water
  • 2 Tbsp Butter
  • 7 Tbsp Tonkatsu sauce
  • 4 Tbsp Ketchup
  • 2 Tbsp Corn syrup (oligosaccharide)
  • 2 Tbsp Vinegar

Cooking Instructions

Step 1

Place the fresh baby greens in a deep bowl and add water to keep them crisp and vibrant.

Cut the fresh ginseng into 2-3 cm pieces, peel it, and then finely mince it. (If the strong ginseng aroma is a concern, you can adjust the amount or omit it.)

Remove the stem from the red chili pepper, cut it in half, remove the seeds, and then mince it finely. (Completely remove seeds if you prefer less spiciness for children.)

Mince the scallion, garlic, onion, and pear in the same manner.

Wash the boneless chicken thighs and pat them dry. Carefully use the tip of your knife to separate the meat from the bone, being cautious not to cut yourself as the chicken can be slippery.

Remove any tough tendons or excess skin from the separated chicken thigh meat to ensure a tender texture.

Finely mince the prepared chicken thigh meat using a knife or a food processor. Minced meat is crucial for achieving the soft texture of Galbi.

In a large bowl, combine the minced chicken with the minced ginseng, chili pepper, scallion, garlic, onion, and pear.

Add all the seasoning ingredients for the Galbi, including soy sauce, sesame oil, salt, sugar, and pepper, and mix thoroughly.

Place the small pumpkin in a steamer and steam for about 10-15 minutes after the water starts boiling, until tender.

In a saucepan, combine all the sauce ingredients: soy sauce, olive oil, lemon juice, honey, sesame oil, toasted sesame seeds, water, butter, tonkatsu sauce, ketchup, corn syrup, and vinegar. Stir well and bring to a simmer over medium-low heat until the ingredients are well combined and the sauce slightly thickens.

Melt butter in a frying pan and add the prepared asparagus spears, basting them with the butter to infuse their flavor. Slice the onion in half and grill the cut side in the pan to enhance its sweetness. Then, shape the seasoned chicken mixture into small, flat patties and pan-fry them over medium heat until golden brown on both sides and cooked through. Be patient to ensure the inside is fully cooked.

To plate, arrange the grilled onion slices on the bottom of the plate. Place the butter-infused asparagus spears in an ‘X’ shape on top of the onion. Position the cooked Galbi patties over the asparagus. Gently place the drained baby greens on top of the Galbi. Arrange the steamed pumpkin slices like crescent moons on the side. Finally, drizzle the Oriental sauce generously in a zigzag pattern over the Galbi and the plate. Sprinkle finely chopped pine nuts over the dish for a decorative and flavorful finish.
