With year-end parties happening frequently, wine is an indispensable part of the celebration! I’m sharing a recipe for Bruschetta, a highly recommended appetizer for wine. It’s simple yet elegant, perfect for entertaining.
Bruschetta Ingredients- Baguette, generously sliced (as much as you’d like)
- Cherry tomatoes, 1 pint (approx. 250g)
- Fresh mozzarella cheese, 1 ball (or sliced)
- Baby greens, a handful (optional)
Marinade Ingredients- Vinegar, 48 Tbsp (precise measurement recommended)
- Sugar, 18 Tbsp (adjust to taste)
- Extra virgin olive oil, 48 Tbsp

Cooking Instructions
Step 1
Start by preparing the cherry tomatoes. Blanch them in boiling water for about 1 minute. This step makes peeling them much easier.

After blanching, rinse the tomatoes under cold water to cool them down. Then, gently press them with your hands or use a skewer to easily peel off the skin. Make sure to peel all the cherry tomatoes, as we’ll only be using the insides.

Now, let’s make the marinade sauce that will elevate your Bruschetta! The ratio is key: combine vinegar, sugar, and olive oil in an 8:3:8 proportion. (Example: 48 Tbsp vinegar, 18 Tbsp sugar, 48 Tbsp olive oil). Here’s a pro-tip: Don’t mix everything at once. First, add the sugar to the vinegar and stir until the sugar is completely dissolved. Once the sugar is dissolved, add the olive oil and gently whisk everything together to create a delicious marinade.
Step 4
Add the peeled cherry tomatoes to the prepared marinade sauce and let them marinate for at least 30 minutes. This allows the flavors to deeply infuse into the tomatoes, enhancing their taste.

Cut the fresh mozzarella cheese into bite-sized pieces, about 1.5 to 2 cm cubes. You can also use pre-sliced mozzarella if preferred.

Slice the baguette into 1.5 to 2 cm thick pieces. Toast them on a lightly buttered pan or in a toaster oven until both sides are golden brown and crispy. The edges should have a slight toasted color.

Gently combine the mozzarella cheese cubes with the marinated cherry tomatoes. Let them sit together for a few more minutes for the flavors to meld beautifully.

Baby greens can wilt quickly if marinated for too long. To keep them fresh and crisp, lightly toss them with a little of the marinade sauce (or a touch of olive oil) just before assembling the Bruschetta on the bread.
