Repurposing leftover microwave-steamed cabbage, typically enjoyed with spicy gochujang and doenjang dip, we’re adding fresh onions to create a ‘Cabbage Onion Salad’ inspired by Banh Mi or Kebab. This recipe is incredibly simple and utilizes ingredients you likely have at home! If you don’t have basil powder, simply omit it. Instead of honey, you can use corn syrup, and if lemon juice is unavailable, apple cider vinegar is a great substitute (preferable over regular distilled vinegar). This super easy Cabbage Onion Salad, when generously added to a sandwich with smoked chicken breast, makes for a fantastic lunchbox meal. Try using it as a filling for sandwiches or burgers!
Salad Ingredients- 1/2 Onion (finely minced)
- 1/6 Red Cabbage (thinly shredded)
- 2 Tbsp Mayonnaise
- 1 Tbsp Ketchup
- 1 Tbsp Lemon Juice
- 1 Tbsp Honey
- Pinch of Basil Powder
- Pinch of Black Pepper
Cooking Instructions
Step 1
First, prepare 1/2 an onion. Instead of mincing it too finely, aim for a slightly coarser chop so that there’s a noticeable texture when you bite into it. This minced onion will add a delightful crunch to your salad.
Step 2
Wash and thinly shred 1/6 of a red cabbage. Its vibrant color will add visual appeal to the salad, and its crisp texture complements the other ingredients beautifully.
Step 3
In a bowl, combine 2 tablespoons of mayonnaise, 1 tablespoon of ketchup, 1 tablespoon of lemon juice, and 1 tablespoon of honey. For added flavor, sprinkle in a pinch of basil powder and a pinch of black pepper.
Step 4
Add the prepared minced onion and shredded red cabbage to the bowl from step 2. Mix everything thoroughly until well combined. This is how you create your super simple Cabbage Onion Salad!
Step 5
Transfer the finished salad to an airtight container and store it in the refrigerator. It will stay delicious for 3-4 days. It’s great as a side dish with tonkatsu or fantastic served on bread.
Step 6
For the sandwich, warm the smoked chicken breast in the microwave for about 1 minute and 30 seconds. Warming it makes it even more tender and flavorful.
Step 7
You can lightly toast the Banh Mi baguette or warm it in the microwave according to your preference. Slice the baguette in half lengthwise, then generously pile the Cabbage Onion Salad onto one side.
Step 8
Place 3 fresh lettuce leaves on top of the salad. You can add ketchup as desired, or if you’re not a big fan of ketchup, a drizzle of mustard sauce would also be delicious for a richer flavor profile.
Step 9
Finally, add 1 slice of mozzarella cheese on top. Wrap the sandwich in parchment paper, cut it in half, and then wrap it with plastic wrap. This makes for a satisfying lunchbox meal. It’s best enjoyed warmed, as cold bread and cheese can lack flavor.
Step 10
Here’s a look at the cross-section of the halved sandwich. The unique garlic butter aroma of the Banh Mi baguette pairs wonderfully with the filling. The refreshing taste of the Cabbage Onion Salad and the savory smoked chicken breast create a perfectly balanced and fulfilling meal. As long as you have bread, this versatile Cabbage Onion Salad can be easily transformed into a delicious sandwich anytime.
