Cooking Instructions
Step 1
First, rinse the mixed grain rice about 3 times and soak it in water for over 30 minutes. Soak the dried seaweed in plenty of water until it softens. Wash the carrot and cut it into thin, long julienne strips. Briefly rinse the tofu under running water, then drain it well. Lightly sprinkle coarse sea salt on the tofu while draining to enhance its flavor.
Step 2
Place the soaked mixed grain rice into the rice cooker. Spread the rice evenly to ensure it cooks fluffy.
Step 3
Add water for cooking the rice. Measure the water to the level of your fingertip or the amount you’d normally use for mixed grain rice (about one finger joint’s height is suitable).
Step 4
Add the seasoned tofu to the rice cooker. Gently press it down so the water distributes evenly.
Step 5
To eliminate any fishy smell from the seaweed and add a richer flavor, sprinkle 1.5 Tbsp of rice wine evenly over the water. This step is key to enhancing the aroma of your seaweed rice!
Step 6
Add the julienned carrots on top of the other ingredients in the rice cooker. They will add a beautiful color and texture.
Step 7
Finally, spread the well-drained soaked seaweed evenly over the ingredients in the rice cooker. Covering the ingredients with seaweed helps it blend well during cooking.
Step 8
Now, close the lid of the rice cooker and press the ‘Cook’ button to prepare the delicious nutritious rice. Use the standard white rice cooking mode.
Step 9
While the rice is cooking, finely chop the washed chives. Mince them finely so they incorporate well into the sauce.
Step 10
Now it’s time to make the delicious sauce. Add 1 Tbsp of minced garlic to a bowl.
Step 11
Add 4 Tbsp of soy sauce for a savory umami flavor.
Step 12
Add 1 Tbsp of sesame oil for a rich, nutty aroma.
Step 13
Add 1.5 Tbsp of gochugaru (Korean chili flakes) for a mild spiciness and vibrant color.
Step 14
Add 1/2 Tbsp of vinegar to balance the flavors with a touch of tanginess.
Step 15
Add 1 Tbsp of toasted sesame seeds for added texture and nutty flavor.
Step 16
Add 1 Tbsp of lukewarm water to adjust the consistency of the sauce, preventing it from being too thick.
Step 17
Once the rice is cooked, let it rest for 5-10 minutes without opening the lid. After steaming, open the rice cooker and gently mix the rice, tofu, seaweed, and carrots with a spatula to ensure they are evenly distributed.
Step 18
Serve the finished nutritious rice attractively in a bowl, and mix it well with the homemade golden sauce to enjoy! ♡
