Hello! I’m Nani. This is an egg custard dish I whip up quickly when I don’t have any side dishes or feel too lazy to cook a full meal. The silken tofu makes it incredibly soft and moist, and it’s very easy to digest. Since it’s made in the microwave, it’s simple, quick, and anyone can make it. It’s perfect for both adults and children to enjoy together.

Ingredients

  • 5 eggs
  • 350g silken tofu
  • 1/2 green onion (chopped)

Seasoning & Others

  • 1 Tbsp cooking wine (mirin, etc.)
  • 1/2 Tbsp minced garlic
  • 1 Tbsp salted shrimp (with brine)
  • Pinch of black pepper

Cooking Instructions

First, prepare all the ingredients needed for the recipe. Gather fresh eggs, soft silken tofu, aromatic green onions, and the seasoning ingredients: cooking wine, minced garlic, salted shrimp, and pepper.

Prepare a microwave-safe, deep glass or ceramic bowl. Choose one that’s not too small, so the ingredients won’t overflow when cooked.

Crack the 5 eggs into the prepared bowl. Carefully remove the chalazae (the white, stringy bits) using chopsticks or a fork. Removing the chalazae ensures a smoother texture. Gently whisk the eggs until just combined, avoiding excessive foam.

Add the 350g of silken tofu to the whisked eggs in large chunks; don’t mash it yet. This helps maintain a pleasant texture. Next, add 1/2 tablespoon of minced garlic and mix it in.

Add 1 tablespoon of cooking wine to help eliminate any eggy smell and enhance the flavor. If you don’t have cooking wine, mirin or sake can be used as substitutes.

Sprinkle a pinch of black pepper for added aroma. Be mindful not to add too much, as it can make the dish spicy.

Add 1 tablespoon of salted shrimp for a savory depth of flavor. Including the brine from the salted shrimp will add even more richness. If you don’t have salted shrimp, you can use fish sauce or soy sauce. For a special twist, try adding chopped salted pollock roe (‘Myeongran’) for a delicious ‘Myeongran Silken Tofu Egg Custard’.

Now, gently stir everything together with a spatula or spoon until well combined. It’s important to mix gently to avoid breaking up the silken tofu too much. This ensures the custard will be smooth and the tofu will remain moist.

Finally, sprinkle the chopped green onions evenly over the top. If you enjoy a bit of heat, you can also add thinly sliced chili peppers for a spicy kick.

Cover the bowl with a lid or microwave-safe plastic wrap. Microwave on the ‘egg custard’ or ‘auto’ setting for about 15 minutes. Cooking times may vary depending on your microwave’s wattage. It’s a good idea to check after about 10 minutes and adjust the time as needed.
