  • 1 cup soaked and prepared Siraegi (dried radish greens)
  • 1 bowl of warm cooked rice
  • 1 egg
  • 1/2 Tbsp cooking oil for frying the egg

First, to ensure a tender texture, carefully remove any fibrous or tough stem parts from the soaked Siraegi. Chop the prepared Siraegi into bite-sized pieces, about 1cm in length. Cutting them uniformly will make them easier to stir-fry and eat.

Now, let’s prepare the seasoning to add a savory depth to the Siraegi. In a bowl, combine 1 Tbsp of Guk-ganjang, 1/2 Tbsp of minced garlic, and 2 Tbsp of fragrant sesame oil. Mix them well.

Once the seasoning is ready, add it to the chopped Siraegi. Gently mix and massage the ingredients together with your hands until the Siraegi is evenly coated with the seasoning. This ‘massaging’ helps the flavors to fully penetrate the greens.

Prepare 1 bowl of warm cooked rice. You can use any kind of rice – white rice, multi-grain rice, or brown rice – all will work wonderfully for this dish.

Heat a pan over medium heat without adding any oil. Add the seasoned Siraegi first and stir-fry. Since it’s already seasoned with sesame oil, it shouldn’t stick or burn easily, and will release a delightful nutty aroma. Once the Siraegi has softened slightly, add the cooked rice. Use your spatula to break up any clumps of rice and stir-fry everything together until the Siraegi and rice are well combined.

Once the rice and Siraegi are thoroughly mixed and cooked together, taste the mixture and add a pinch of salt if needed to adjust the final seasoning to your preference. For those who enjoy a richer flavor, feel free to add finely chopped vegetables, ham, or your favorite type of meat to stir-fry along with the rice and Siraegi – it makes it even more delicious!

Finally, add about 1/2 Tbsp of cooking oil to a separate pan and fry an egg to your liking – a sunny-side-up with a slightly runny yolk is perfect. Spoon the delicious Siraegi fried rice onto a plate and top it with the freshly fried egg. For an extra touch, sprinkle some seaweed flakes and black sesame seeds on top. Your flavorful and satisfying Siraegi fried rice is now ready to be enjoyed!
