Every weekend, I find myself wondering, ‘What should we eat today?’ This time, I decided to make vegetable gimbap packed with fresh veggies. It’s so wonderful to see my children enjoying it so much! This recipe is perfect for a healthy and delicious weekend meal.

Let’s get started on making delicious vegetable gimbap! This is a nutritious roll that both children and adults will love!

First, let’s prepare the egg omelets. In a bowl, whisk the 6 eggs with a pinch of salt until smooth. Lightly grease a rectangular frying pan with oil and pour in a thin layer of egg mixture over medium-low heat. Cook until set, then flip and cook the other side until golden brown. Once cooled slightly, cut the omelets into strips suitable for gimbap.

Wash the carrot thoroughly and pat it dry. Using a mandoline slicer or a knife, julienne the carrot into thin, long strips. Cutting them not too thick will make them easier for children to eat.

Now, let’s stir-fry the julienned carrots. Heat a little vegetable oil in a frying pan over medium-low heat. Add the carrots and stir-fry them. Season with a tiny pinch of salt and pepper; this will enhance the sweetness of the carrots and improve their flavor. Cook until the carrots become tender and slightly translucent. Set aside to cool.

Let’s prepare all the other ingredients for the gimbap! (Common gimbap fillings include seasoned burdock root, pickled radish, the egg omelets we just prepared, ham, imitation crab sticks, and stir-fried carrots.) Feel free to add other vegetables like spinach or cucumber based on your preference. When you’re ready to assemble, make sure the gimbap seaweed sheets are ready on your bamboo mat. You can lightly moisten the end of the seaweed sheet with a bit of rice to help seal the roll later.

Once the rice is cooked and fluffy, spread it out on the bamboo mat and let it cool slightly. Avoid seasoning the rice while it’s too hot, as it can become mushy. Once the rice is warm, season it with salt. Add sesame oil and toasted sesame seeds. Gently mix the rice with a spatula, being careful not to mash the grains, until everything is evenly combined and the rice is glossy.

It’s time to roll the gimbap! Place a sheet of seaweed on the bamboo mat. Spread a thin, even layer of the seasoned rice over about two-thirds of the seaweed sheet, leaving a small border at the top. Arrange your prepared fillings – the stir-fried carrots, egg omelet strips, and any other chosen ingredients – neatly on top of the rice. Be careful not to overfill, as it can cause the roll to break when you cut it.

Using the bamboo mat, start rolling the gimbap tightly from the bottom edge, tucking in the fillings as you go. Lift the mat and continue rolling, pressing gently to ensure the roll is firm and compact. A tightly rolled gimbap will hold its shape beautifully when sliced.

Once the gimbap is rolled, you can brush a little sesame oil on the outside for extra shine and flavor. To slice, use a sharp knife. Dipping the knife blade in water or oil will help prevent the rice from sticking and ensure clean cuts. Slice the gimbap into bite-sized pieces.
