Main Ingredients

  • 1 block firm tofu (for frying or regular)
  • 2 large eggs
  • 1 handful green onions, finely chopped
  • 2 Tbsp cooking oil
  • 2 Tbsp soy sauce
  • 1 Tbsp oyster sauce
  • 1-2 Tbsp dried shrimp (optional, for extra umami!)
  • A little sesame oil (for finishing)

Cooking Instructions

Heat cooking oil in a pan over medium-low heat. Add the finely chopped green onions and stir-fry.

Continue to sauté until the green onions turn a vibrant green and become fragrant, releasing their aromatic oil. This step adds a wonderful depth of flavor to the dish.

Rinse the block of tofu under running water, lightly drain any excess water, and place it whole into the pan with the green onion oil.

Using a spatula, break down the tofu into smaller pieces and stir-fry, allowing some of its moisture to evaporate. You don’t need to press the tofu beforehand.

Add 2 tablespoons of soy sauce to the crumbled tofu and stir to combine, seasoning it evenly.

Add 1 tablespoon of oyster sauce and continue to stir-fry with the tofu. Oyster sauce enhances the overall flavor profile of the tofu.

Crack the 2 eggs directly into the pan.

Gently stir the eggs with the spatula as they cook, scrambling them and mixing them with the crumbled tofu until you achieve a scramble-like consistency.

If you like, add 1-2 tablespoons of dried shrimp for an extra boost of umami. You can omit this if you don’t have it.
