  • 2 fresh eggs
  • A good amount of green onions or scallions (chopped)
  • 1 serving of warm cooked rice (approx. 200g)
  • 1 pinch of salt (to taste)
  • 1/2 to 1 Tbsp oyster sauce (adjust to your preference)

Cooking Instructions

First, prepare the green onions, which will add a wonderful aroma to your fried rice. Wash the green onions thoroughly, then finely chop both the white and green parts. Frying the onions in oil will release their sweet fragrance, making the fried rice even more delicious. Scallions can also be used.

Heat 1-2 tablespoons of cooking oil in a pan over medium-low heat. Add the chopped green onions and stir-fry gently. Cook until the onions turn golden and release their sweet aroma. This step creates fragrant ‘scallion oil,’ which significantly enhances the flavor of the fried rice.

Once the scallions are fragrant, push them to one side of the pan. Crack the 2 fresh eggs into the cleared space. Let the eggs set slightly, then break the yolks and scramble them with chopsticks or a spatula until they are softly cooked.

As the eggs begin to set, add the 1 serving of warm cooked rice to the pan. Break up any clumps of rice with your spatula, ensuring it’s evenly distributed. Add a pinch of salt to lightly season the eggs and rice. Be careful not to add too much salt at this stage.

Finally, add oyster sauce to your liking, from 1/2 tablespoon to 1 tablespoon. Stir-fry everything together quickly over high heat for about 1-2 minutes until well combined. The savory umami from the oyster sauce will coat every grain of rice, creating a perfectly delicious egg fried rice! Serve immediately while hot.
