Delicious Stir-fried Pork Belly with Vegetables

Main Ingredients

  • 450g thinly sliced pork belly (daepae samgyeopsal)
  • 1/2 green onion (or to taste)
  • 1/4 carrot
  • 1/2 onion

Sauce Ingredients

  • 2 Tbsp soy sauce
  • 1 Tbsp oyster sauce
  • 1 Tbsp oligosaccharide (adjust sweetness as preferred)
  • 1 Tbsp plum extract (for removing gamey smell and adding umami)
  • Pinch of ginger powder (or 1/2 tsp minced fresh ginger)
  • Pinch of black pepper
  • 1/2 Tbsp minced garlic
  • 2 Tbsp cooking wine (mirin or similar)

Cooking Instructions

Step 1

First, prepare your vegetables. Thinly slice the carrot and onion into strips. Cut the green onion diagonally. This slicing method helps the sauce to be absorbed evenly during cooking.

In a small bowl, combine all the sauce ingredients (soy sauce, oyster sauce, oligosaccharide, plum extract, ginger powder, black pepper, minced garlic, and cooking wine). Mix well with a spoon to create the sauce. Preparing the sauce in advance makes the cooking process much smoother.

Heat a pan over medium heat. Add the thinly sliced pork belly and spread it out as you cook. Because the pork belly is thin, it cooks quickly. It’s best to stir-fry it until it becomes golden brown and slightly crispy. If there’s excessive oil from the pork, push the meat to one side of the pan and carefully dab away the excess oil with a paper towel for a cleaner result.

Once the pork is mostly cooked and the excess oil has been managed, add all the prepared vegetables (carrot, onion, green onion) to the pan. Pour the pre-mixed sauce evenly over the ingredients.

Now, increase the heat to high and stir-fry quickly to combine everything. Stir gently with chopsticks or a spatula, tossing the ingredients so that the vegetables soften slightly and the sauce coats the pork and vegetables evenly. Be careful not to burn the mixture. Stir-fry for about 1-2 minutes until everything is well combined.

Finally, sprinkle some sesame seeds over the top, if desired, and give it a final quick toss before turning off the heat. Transfer the delicious stir-fried pork belly and vegetables to a serving plate. Enjoy this delightful dish with a bowl of hot steamed rice!
