Main Ingredients- 2 medium potatoes
- 2 green chili peppers
- 1 red chili pepper
- 1 Tbsp pancake mix (buchim garu)
- 1 Tbsp frying mix (twigim garu)
- Pinch of black pepper
- Plenty of cooking oil
Cooking Instructions
Step 1
First, peel the potatoes and julienne them as thinly as possible. Soak the julienned potatoes in cold water for about 10 minutes to remove excess starch. Removing the starch prevents the potato shreds from sticking together and helps achieve a crispier texture. After completely draining the water, add 1 tablespoon of pancake mix and 1 tablespoon of frying mix to the potatoes. Sprinkle in a pinch of black pepper. (Tip: Adjust the amount of flour based on the quantity of potatoes. The moisture from the potatoes is usually enough to bind them, so avoid adding extra water for maximum crispiness!) Toss everything together until the potato shreds are coated and slightly clumped.
Step 2
Next, heat a pan over medium-high heat and add a generous amount of cooking oil. Once the oil is hot, spread the prepared potato mixture thinly and evenly in a round shape. Ensure there are no gaps, as this helps the pancake hold together as it cooks. The potato shreds will naturally bind together as they fry, maintaining a nice shape.
Step 3
After placing the potato mixture in the pan, sprinkle the finely chopped green and red chili peppers over the center of the pancake. The chilies add a pleasant spicy kick and a vibrant color, enhancing the overall flavor profile.
Step 4
Cook over medium-low heat until the edges of the potato pancake turn a golden brown and crispy. When the edges are nicely browned and firm, it’s ready to be flipped.
Step 5
Carefully flip the pancake using a spatula and cook the other side until it is also golden brown and crispy. Adjust the heat as needed to ensure both sides are evenly cooked.
Step 6
This potato pancake is incredibly easy to make but offers a uniquely satisfying texture: perfectly crisp on the outside and tender on the inside. The savory potato flavor combined with the delightful crispiness makes it a dish that everyone, young and old, will enjoy.
Step 7
Serve the finished potato pancake as is, or with a side of sweet and sour soy dipping sauce (cho-ganjang) or ketchup for an extra layer of flavor. Its mild seasoning and crispy texture make it an excellent accompaniment to rice or a great snack.
