  • Flavor enhancer (like Dasida), 0.5 tsp (optional, adjust to taste)
  • MSG (Monosodium Glutamate), 1 pinch (optional, enhances umami)

Cooking Instructions

Step 1

First, prepare the broth that forms the base of this delicious kimchi stew. Use 350ml of store-bought anchovy-kelp broth or homemade broth. Chop 80g of well-fermented kimchi into bite-sized pieces, and prepare 300g of soft tofu.

Cut the tofu into bite-sized pieces, about 2cm thick, suitable for eating in the stew. In a small bowl, combine the 80g of kimchi with 1 tsp of sugar and gently mix. This step helps mellow the sourness of the kimchi and enhances its savory flavor.

Heat 5ml of sesame oil (or your preferred cooking oil) in a pot over medium-low heat. Add the sugar-coated kimchi and sauté for 2-3 minutes until softened and fragrant. Sautéing the kimchi deepens the flavor of the stew considerably.

Once the kimchi is well-sautéed, pour in the prepared 350ml of anchovy-kelp broth. Bring it to a boil over high heat and simmer vigorously for 10 minutes. This process allows the delicious flavors of the kimchi to meld with the broth, creating a rich soup base.

As the broth comes to a boil, add 0.5 tsp of minced garlic, 0.5 tsp of flavor enhancer (like Dasida), and a pinch of MSG (if using). Finally, add the drained 150g can of tuna directly into the soup. **Avoid stirring the tuna immediately**; let it simmer in the broth for about 5 minutes over low heat. This allows the tuna’s flavor to gently infuse the soup.

Now, add the cubed tofu and continue to simmer for about 5 minutes, allowing the tofu to soften and absorb the soup’s flavors. Taste the stew and adjust the seasoning. If it’s too salty, add a little water; if it’s too bland, add a pinch of salt.
