  • 10 cherry tomatoes
  • 1 handful baby greens (approx. 30g)
  • 1 pinch salt
  • Vegetable oil for frying
  • 3 Tbsp cornstarch or potato starch

Tofu Gangjeong Glaze

  • 2 Tbsp Mirin (rice wine)
  • 0.5 Tbsp soy sauce
  • 0.5 Tbsp oyster sauce
  • 1 tsp vinegar

Sesame-Yogurt Dressing

  • 3 Tbsp toasted sesame seeds
  • 4 Tbsp plain yogurt
  • 1 Tbsp lemon juice
  • 0.5 Tbsp sesame oil
  • 0.5 Tbsp brown sugar (or corn syrup)
  • 2 pinches salt
  • Pinch of black pepper

Cooking Instructions

Let’s start by preparing all the ingredients for our delicious Tofu Gangjeong Salad. Having everything measured and ready will make the cooking process much smoother.

First, gently pat the block of tofu dry with paper towels. Then, cut it into bite-sized cubes, about 2-3 cm each. Sprinkle a pinch of salt over the tofu cubes and let them sit for about 5 minutes to lightly season the tofu from the inside out.

Wash the cherry tomatoes thoroughly. Remove the stems and then cut them in half or into thirds, depending on their size. This will make them easier to incorporate into the salad.

Now, let’s whip up the creamy sesame-yogurt dressing! In a bowl or blender, combine 3 tablespoons of toasted sesame seeds, 4 tablespoons of plain yogurt, 1 tablespoon of refreshing lemon juice, 0.5 tablespoon of aromatic sesame oil, 0.5 tablespoon of brown sugar, 2 pinches of salt, and a pinch of black pepper. Whisk or blend until all ingredients are well combined and smooth. Feel free to adjust the sugar and salt to your taste.

Lightly pat the salted tofu cubes dry again with paper towels. Place the tofu in a bowl and sprinkle 3 tablespoons of cornstarch (or potato starch) evenly over them. Gently toss the tofu to ensure a thin, even coating of starch on all sides. This step is key to achieving that delightful crispy texture when frying.

Heat a generous amount of vegetable oil in a non-stick skillet over medium heat. Carefully place the starch-coated tofu cubes into the hot oil, making sure not to overcrowd the pan. Fry the tofu, turning occasionally, until all sides are golden brown and crispy. This should take about 5-7 minutes. This creates the perfectly crispy exterior for our tofu gangjeong.

Once the tofu is nicely browned and crispy, push the tofu to one side of the pan or transfer it to a separate pan if using a smaller one. Pour the Tofu Gangjeong Glaze ingredients – 2 tablespoons of mirin, 0.5 tablespoon of soy sauce, 0.5 tablespoon of oyster sauce, and 1 teaspoon of vinegar – into the pan.

Allow the glaze mixture to come to a simmer, then add the crispy fried tofu back into the pan. Gently toss the tofu to coat it evenly with the sauce. Continue to cook, stirring frequently, until the sauce thickens and clings to the tofu, creating a beautiful glaze. This is your savory Tofu Gangjeong! Let it cool slightly before adding to the salad; this helps maintain its crispy texture.
