The Secret Recipe for Seaweed Ramen That Eases Sodium Concerns!

While I don’t eat ramen very often, there are times when I crave it intensely! Seaweed pairs surprisingly well with ramen and, most importantly, it helps prevent bloating, so I always add a bit when I make it. This recipe is highly recommended for those who enjoy the taste of seaweed and are wary of the aftermath of high sodium intake. Enjoy a delicious ramen that’s good for you!
Ingredients- 1/2 pack of instant ramen
- 10-12g rehydrated dried seaweed (about 1/4 cup packed)
- 450-500ml water
- 1 egg
- 1/2 to 1 Korean green chili pepper (optional, to taste)
- Small amount of rice cake soup slices (tteokguk tteok, optional)
- Small amount of leftover vegetables (e.g., carrot, zucchini)
Cooking Instructions
Step 1
Prepare your ingredients: half of a ramen packet (noodles, half the flavor sachet, and half the vegetable sachet), one fresh egg, a small amount of tteokguk tteok (rice cake slices), and any leftover vegetables you have on hand. (Avoid strong-smelling green onions or leeks as they can overpower the ramen’s flavor.) If using dried seaweed, soak it in lukewarm water for 5-10 minutes until it’s soft and pliable.

Step 2
In a pot, combine 400ml of water, half a piece of dried kelp (if you have it for extra broth flavor), the vegetable sachet, and the rehydrated seaweed. Bring this mixture to a boil over high heat. This step helps infuse the broth with a wonderful, oceanic depth.

Step 3
Once the water is boiling vigorously, add half of the ramen powder sachet and the ramen noodles. Gently stir the noodles to prevent them from sticking together and cook for approximately 2 minutes, or until they begin to soften.

Step 4
Now, add your desired additional ingredients such as the rice cake slices, the egg, and the finely chopped Korean green chili pepper. Continue to cook for another 2 minutes, or until the noodles are fully cooked. As the seaweed rehydrates and cooks, it will absorb some of the broth, potentially making it seem like it’s reducing quickly. Taste the broth and if it’s too concentrated for your liking, add an extra 50-100ml of water. Don’t worry if there isn’t a lot of broth left; a slightly richer broth is part of the charm of seaweed ramen!
