Ingredients- 140g unsalted butter, softened to room temperature
- 90g powdered sugar
- 1 large egg, at room temperature
- 180g cake flour (or low-gluten flour)
- 20g cocoa powder
- 1g vanilla extract (or a pinch)
- Almond slices or chopped almonds, for topping (optional)
Cooking Instructions
Step 1
Accurately measure all your ingredients. Ensure the unsalted butter is softened at room temperature so it’s easy to work with. Place the softened butter in a bowl and lightly cream it using a whisk or spatula.

Add the sifted powdered sugar to the butter in 2-3 additions, mixing gently after each addition. It’s important to mix softly rather than vigorously at first, allowing the powdered sugar to incorporate smoothly into the butter.

Once the powdered sugar is mostly incorporated, add the room temperature egg and vanilla extract. Whisk gently until the mixture becomes light and creamy, being careful to prevent the egg from separating. This is the creaming stage.

Sift the cake flour and cocoa powder together directly into the bowl with the butter mixture. Gently add the sifted dry ingredients, then use a rubber spatula to mix using a ’11’ shape or cutting motion. Mix just until the dry streaks disappear – this is key to a tender cookie.

Avoid overmixing the dough. Mix only until about 90% of the flour is incorporated and no dry streaks are visible. Overmixing can result in tough cookies with a poor texture. It’s okay if a tiny bit of flour is still visible.

Transfer the dough to a piping bag fitted with your desired tip. Pipe the dough onto a baking sheet lined with parchment paper into your preferred shapes. Decorate with almond slices or chopped almonds as desired.
