Instant Tteokbokki (Serves 3-4)

  • 20 Tteokbokki rice cakes (tteok)
  • 1/4 head of cabbage (cut into large pieces)
  • 1/2 onion (cut into large pieces)
  • 2 green onions (sliced diagonally)
  • 5 sheets of fish cake (eomuk, cut into desired shapes)
  • Dried glass noodles (dangmyeon), soaked for at least 30 minutes
  • 400ml water (or anchovy broth for extra flavor)
  • A pinch of sesame seeds (for garnish and aroma)

Sauce Ingredients

  • 1 Tbsp gochujang (Korean chili paste)
  • 2 Tbsp soy sauce
  • 1 Tbsp sugar
  • 1 Tbsp chunjang (black bean paste)
  • 2 Tbsp corn syrup or oligodang (for gloss and sweetness)
  • 1/3 Tbsp MSG-based seasoning (like Dasida, optional for enhanced umami)
  • A pinch of black pepper

Cooking Instructions

First, prepare the vegetables for your tteokbokki. Chop the cabbage into large pieces, and do the same for the half onion. Slice the green onions diagonally. Now, arrange the large pieces of cabbage at the bottom of your pot. Then, artfully place the sliced onion and green onions around the cabbage, creating a visually appealing base.

Next, add the fish cake. Cut the fish cake sheets into your preferred shapes – strips or bite-sized pieces – and place them alongside the vegetables. Using various shapes can make your tteokbokki look even more enticing.

Now, evenly distribute the tteokbokki rice cakes over the prepared vegetables and fish cake. It’s a good idea to rinse the rice cakes in cold water beforehand for a cleaner cooking process.

Arrange the soaked glass noodles on top of the rice cakes. Pour the pre-mixed sauce ingredients evenly over everything in the pot, ensuring the sauce gets into all the nooks and crannies.

Pour the 400ml of water into the pot, pouring it around the edges. Start by bringing the mixture to a boil over high heat.

Once boiling, reduce the heat to medium and simmer for about 10 to 15 minutes, or until the rice cakes are soft and chewy. Stir occasionally to prevent the rice cakes from sticking to the bottom of the pot. For an extra treat, you can add a generous amount of mozzarella cheese on top during the last few minutes of cooking and let it melt! (Cheese is optional).
