I learned this recipe from my mom, a home cooking expert, and decided to try it myself for the first time! The combination of chewy bacon and crisp enoki mushrooms is fantastic. It’s a simple yet impressive dish, perfect for special occasions or when entertaining guests!

  • 5-6 slices Bacon
  • 1 pack Enoki mushrooms (trim the root end and lightly rinse under running water)

First, it’s important to prepare the enoki mushrooms cleanly. Trim off the dirty end of the mushroom root and lightly rinse them under running water. Pat them dry. This helps remove excess moisture during cooking, leading to a neater final dish.

Next, prepare the bacon. It’s best to cut the bacon into strips that are a good size for wrapping the enoki mushrooms. Cutting them lengthwise will make rolling easier.

Now it’s time to roll! Take a bundle of the prepared enoki mushrooms and wrap them tightly with a strip of bacon. Roll them up securely so the bacon holds the mushrooms firmly in place. This ensures they maintain their shape beautifully while cooking and don’t come apart. Make several rolls!

We will now cook the rolled bacon and enoki mushrooms in a frying pan. Heat the pan with a little oil, or you can cook them using just the fat rendered from the bacon itself. Cook over medium-low heat, turning occasionally, until the bacon is golden brown and crispy. Be sure to flip them frequently to prevent burning.
