Main Ingredients

  • 1 can Canned Saury (including the liquid)
  • 380g Korean Radish (approx. 1/4 of a medium radish)
  • 1/2 medium Onion
  • 1/2 stalk Green Onion
  • 1 Green Chili Pepper (optional, for a spicier kick)

Seasoning Ingredients

  • 5 Tbsp Soy Sauce
  • 1 Tbsp Gochugaru (Korean chili powder)
  • 1/2 Tbsp Brown Sugar
  • 1 Tbsp Minced Garlic
  • 2 Tbsp Cooking Wine (Mirin or Cheongju)
  • Pinch of Black Pepper
  • 250ml Anchovy-Kelp Broth or Rice Water

Cooking Instructions

Step 1

First, peel the radish and cut it into bite-sized pieces. Slice the onion thinly, and cut the green onion diagonally. Slice the green chili pepper diagonally as well. (You can omit the chili pepper if you prefer less spice.)

Arrange the cut radish pieces at the bottom of a pot. Pour in the entire contents of the canned saury, including the liquid. (The liquid from the can adds a deep flavor to the stew!)

On top of the radish and saury, artfully arrange the sliced onion, green onion, and green chili pepper. Now, let’s prepare the delicious seasoning sauce.

In a small bowl, combine 5 Tbsp soy sauce, 1 Tbsp gochugaru, 1 Tbsp minced garlic, 1/2 Tbsp brown sugar, 2 Tbsp cooking wine, and a pinch of black pepper. Mix well. (Mixing in 4 Tbsp of the broth or rice water at this stage helps the seasoning dissolve better.)

Evenly pour the prepared seasoning sauce over the ingredients in the pot. Then, pour the remaining 250ml of anchovy-kelp broth (or rice water) around the edges of the pot. (If you don’t have broth, water is an acceptable substitute.)

Cover the pot with a lid and bring it to a boil over medium-high heat. Once it starts bubbling vigorously, reduce the heat to low. Cover again and let it simmer gently until the sauce is reduced to a thick glaze. The radish should be tender, and the flavors well-infused. Your delicious Canned Saury and Radish Stew is complete! Enjoy it with a warm bowl of rice.
