Chicken Stew Ingredients

  • 1 whole chicken or cut chicken pieces
  • 1 onion (washed thoroughly, skin on)
  • 3-4 stalks of green onion (mostly white parts)

  • 1/2 Tbsp whole black peppercorns
  • 1.5 L water

Chicken Porridge Ingredients

  • 2 cups glutinous rice (soaked for at least 2 hours)
  • 2 cups chicken broth (from cooking the chicken)
  • 1/3 carrot (finely minced)
  • 1/4 zucchini (finely minced)
  • 1/4 onion (finely minced)
  • Salt or soy sauce to taste
  • A drizzle of sesame oil (for nutty aroma)
  • A sprinkle of sesame seeds (for garnish)

First, prepare the chicken for the stew by washing it thoroughly. Remove any internal debris and rinse the inside and outside with clean water.

Add 1.5 liters of water and bring to a boil over high heat. Once boiling, carefully skim off any impurities or foam that rise to the surface. This step is crucial for a clear and clean broth.
