Main Ingredients- 2 medium-sized potatoes
- 2 cups fresh milk (approx. 400ml)

Cooking Instructions
Step 1
First, peel the potatoes and cut them into bite-sized pieces, about 2-3 cm. Place the potatoes in a pot, cover them with water, and bring to a boil over high heat. Once boiling, reduce the heat to medium and simmer for about 15-20 minutes until the potatoes are very tender. They should be easily pierced with a fork.
Step 2
While the potatoes are cooking, melt 1 piece of butter in a deep pan over low heat. Be careful not to burn the butter; melt it gently.

Peel and thinly slice the half onion. Add the sliced onions to the melted butter in the pan and begin to sauté.

Sauté the onions over medium-low heat until they become translucent and slightly golden brown around the edges. This process develops a subtle sweetness that enhances the soup’s flavor. Avoid high heat, as it can cause the onions to burn.

Drain the cooked potatoes and transfer them to a soup pot. If you used butter to sauté the onions, you can drain off any excess and add just the sautéed onions to the pot. Finally, pour in 2 cups (approx. 400ml) of milk.

You can adjust the amount of milk based on the quantity of potatoes. A good guideline is about 1 cup of milk (approx. 200ml) per medium potato for a smooth consistency. Feel free to add more or less milk to achieve your desired thickness.

Now, it’s time to blend everything until smooth. You can use an immersion blender directly in the pot, or transfer the ingredients to a regular blender. If using a regular blender, it’s safer to let the potatoes and onions cool down a bit before blending to avoid steam build-up. Blend until very smooth for the best texture.

Return the blended soup to the pot and heat it over low heat, stirring occasionally to prevent sticking. Once the soup is heated through and gently simmering, season with salt to your liking. You can also add a pinch of black pepper for extra flavor, if desired.
