Ingredients

  • 1 cup Seoritae beans (black soybeans)
  • 1 cup of water used to boil the Seoritae beans
  • 4 Tbsp Soy sauce
  • 4 Tbsp Corn syrup (or more/less to taste)
  • Sesame seeds for garnish

Cooking Instructions

Step 1

First, prepare 1 cup of Seoritae beans (about 150g). Rinse the beans thoroughly, then add about 3 cups of water and let them soak for 4-6 hours, or overnight. Soaking makes the beans tender and improves the final texture of the dish.

Transfer the soaked Seoritae beans to a pot. Add enough clean water to cover the beans completely. Bring to a boil over high heat, then reduce to medium-low heat and simmer for about 20-30 minutes, or until the beans are tender. You can check for tenderness by piercing a bean with a chopstick; it should go through easily.

Drain the cooked Seoritae beans using a sieve. Importantly, reserve about 1 cup (200ml) of the bean-boiling water. This water will be used in the braising liquid, adding depth of flavor and nutrition.

Now, let’s start braising the beans. Pour 1 cup (200ml) of the reserved bean-boiling water into a wide pan or pot.

Add the drained, cooked Seoritae beans to the pan. This ensures the beans will readily absorb the upcoming flavors.

Next, add 4 tablespoons of soy sauce for a savory umami base. You can adjust the amount of soy sauce to your preference.

Add 4 tablespoons of corn syrup for sweetness and a glossy finish. Corn syrup provides a beautiful sheen; you can substitute with sugar or rice syrup if preferred, but adjust the quantity to achieve your desired sweetness.

Cook over medium heat, stirring gently with a spatula or spoon to prevent the beans from breaking. Continue to simmer, allowing the flavors to meld and the liquid to reduce until it thickens slightly and coats the beans with a glossy glaze. This usually takes about 10-15 minutes. The key is to let the sauce reduce until it’s just coating the beans.
