Main Ingredients

  • 1 bunch blanched young garlic leaves (after trimming)

Seasoning Ingredients

  • 1 Tbsp gochujang (Korean chili paste)
  • 3 tsp tuna extract sauce
  • 1 tsp sugar
  • Sesame seeds, to taste
  • Sesame oil, to taste

Cooking Instructions

Step 1

First, carefully trim the fresh young garlic. Remove any dirt or wilted leaves. Rinse them thoroughly under running water multiple times to ensure they are clean, then drain any excess water.

Step 1

Step 2

Bring a pot of water to a boil. Briefly blanch the trimmed young garlic leaves for about 30 seconds to 1 minute. Be careful not to overcook them, as they can become mushy. Immediately transfer the blanched leaves to cold water to stop the cooking process. Gently squeeze out as much water as possible using your hands.

Step 2

Step 3

In a bowl, combine the squeezed young garlic leaves with 1 tablespoon of gochujang, 3 teaspoons of tuna extract sauce, and 1 teaspoon of sugar. Gently toss and mix the ingredients until the seasoning is evenly distributed. Taste and adjust the sweetness or saltiness by adding more sugar or tuna extract sauce if desired.

Step 3

Step 4

Finally, add a sprinkle of sesame seeds and a dash of sesame oil for extra flavor and aroma. Gently mix once more. Transfer the finished seasoned young garlic leaves to a serving dish. This delicious side dish is ready to be enjoyed immediately or can be stored in the refrigerator for later.
