Inspired by a YouTube video, I’ve recreated this unique Rice Paper Rice Sandwich! It’s a fantastic way to use up leftover rice and create a delightful meal. While delicious on its own, I highly recommend drizzling it with a sauce like sriracha or chili sauce to elevate the flavors and cut through any richness. Get ready for a satisfyingly crispy and flavorful bite!

  • 1 Egg
  • 1/2 bowl Cooked Rice
  • 2 slices Sliced Ham (or thinly sliced regular ham)
  • 2 slices Sliced Cheese

Rice Seasoning

  • Pinch of Salt
  • Pinch of Sesame Oil
  • Pinch of Toasted Sesame Seeds

Cooking Instructions

Step 1

First, crack one egg into a bowl. Remove the chalazae (the white stringy bits) if desired, and then whisk it well with a fork or whisk until smooth. You can add a tiny splash of water to make it cook up a bit more tender.

Prepare two slices of ham. If you have pre-sliced sandwich ham, that’s convenient. If you’re using a block of ham, slice it thinly so it fits well inside the sandwich. Personally, I find that slightly thicker ham slices offer a more satisfying chew.

Measure out about half a bowl of cooked rice. Season it lightly with salt, add a drizzle of sesame oil for aroma, and sprinkle in some toasted sesame seeds. This step is similar to preparing rice for kimbap and adds a foundational layer of flavor to the rice.

Using a spatula or spoon, gently mix the seasoned rice. Ensure the rice grains are not clumped together. It’s best if you can taste a slight seasoning in the rice, as this enhances the overall flavor of the sandwich.

Lay one sheet of rice paper flat on a clean work surface or a large plate. Spread about half of the seasoned rice thinly and evenly over one half of the rice paper. Be mindful not to make the rice layer too thick, as this can make it difficult to fold or ensure even cooking.

Heat a non-stick pan over medium heat and add a generous amount of cooking oil. Once the oil is shimmering, carefully place the rice paper with the rice onto the pan, ensuring the rice side faces down.

As the bottom of the rice layer starts to turn golden brown, pour the prepared egg wash evenly over the rice. Try to coat the rice entirely. The egg might puff up slightly as it cooks.

If any egg runs down the sides and onto the rice paper, use your spatula to gently fold that excess egg back over onto the rice. Don’t worry too much about perfect aesthetics here; just try to keep it contained.

Carefully flip the rice paper and rice over so that the cooked egg side is now in contact with the pan. Cook until the egg is fully set and golden brown. Maintain medium heat to prevent burning.

Once the egg side is cooked, flip it back again so the rice side is facing up. Now it’s time to add the fillings. Layer the two slices of ham onto one half of the rice paper.

Place the two slices of cheese on top of the ham. The melting cheese will help bind the ham and rice together.

To create the sandwich fold, use your spatula to gently press down on the empty side of the rice paper to create a guideline. Then, fold the rice and filling-laden half over to meet the other side, forming a half-moon shape. Finally, pan-fry both sides of the folded sandwich until they are golden brown and crispy. Your Rice Paper Rice Sandwich is now ready!

Transfer the finished sandwich to a plate. You can garnish it with some fresh fruit for a beautiful presentation. Cut it in half with scissors or a knife for easier eating. Eating it plain might be a bit rich for some, so I strongly recommend drizzling it with sriracha or chili sauce! The spicy sauce beautifully balances the richness and adds an extra layer of flavor.
