  • 6 stalks of scallions
  • 1 Cheongyang pepper (optional, for spice)

Seasoning

  • A pinch of roasted salt (adjust to taste)
  • 1/2 Tbsp tuna extract (for umami)
  • 1 Tbsp sesame oil
  • 1 Tbsp gochugaru (Korean chili flakes)
  • 0.5 Tbsp minced garlic
  • A sprinkle of toasted sesame seeds

Wash the fresh cucumber thoroughly under running water. Trim off the very ends of the cucumber. Using a vegetable peeler, remove the skin in strips, leaving some green skin on for visual appeal. Slice the cucumber into bite-sized pieces, about 0.5 cm thick.
