This savory and salty Napa Cabbage Salad seasoned with Doenjang is a favorite side dish in our home, loved by both children and adults! It’s a delicious and healthy banchan that everyone can enjoy. Highly recommended!
Main Ingredients- 8 sheets Napa cabbage (palm-sized, approx. 210g)
- Pinch of salt (for blanching)
Seasoning Ingredients- 1 Tbsp minced green onion
- 1 Tbsp Doenjang (Korean soybean paste) (use 1/2 Tbsp if using homemade Doenjang)
- 1 tsp perilla powder
- 1 tsp sesame seeds
- 1 tsp soy sauce
- 1 tsp plum syrup
- 1 tsp sesame oil
- 1 Tbsp minced green onion
- 1 Tbsp Doenjang (Korean soybean paste) (use 1/2 Tbsp if using homemade Doenjang)

Cooking Instructions
Step 1
Bring 600ml of water and 1/2 Tbsp of salt to a rolling boil in a pot over high heat. Once boiling, add the Napa cabbage and reduce the heat to medium. Blanch for 4 minutes, or until the cabbage is tender. Adjust the cooking time based on the desired tenderness of the cabbage.
Step 2
Immediately rinse the blanched cabbage under cold running water to cool it down. Gently squeeze out as much water as possible. This step is crucial to prevent the salad from becoming watery. Cut the cabbage into bite-sized pieces.
Step 3
In a large bowl, combine all the seasoning ingredients: Doenjang, minced green onion, perilla powder, sesame seeds, soy sauce, plum syrup, and sesame oil. Mix them thoroughly to create a flavorful dressing. You can adjust the amount of soy sauce or Doenjang depending on the saltiness of your Doenjang.
Step 4
Add the prepared cabbage to the dressing and gently toss to coat evenly. Ensure the seasoning is well distributed throughout the cabbage. Transfer the delicious Napa Cabbage Doenjang Salad to a serving dish. It’s ready to be enjoyed immediately, or you can refrigerate it for a more enhanced flavor!
