Main Ingredients

  • 200g Cheonggukjang (fermented soybean paste)
  • 2-3 leaves of aged/sour Kimchi, finely chopped
  • 1 Tbsp home-style Doenjang (soybean paste)
  • 3 Button mushrooms
  • 1/2 Onion
  • 1/2 block Tofu
  • 1/2 stalk Green onion
  • 1/2 Tbsp minced garlic
  • 2 Korean green chili peppers

Cooking Instructions

Step 1

Finely chop the aged Kimchi, which adds a crucial depth of flavor to Cheonggukjang stew. If your Cheonggukjang is low-sodium, add the home-style Doenjang first. Pour in anchovy broth and bring it to a rolling boil. This step helps to extract the savory flavors from the Doenjang and Kimchi into the broth.

Step 1

Step 2

Once the broth is boiling, add the prepared button mushrooms, onion, and tender tofu, cut into bite-sized pieces. The sweetness from the vegetables and the softness of the tofu will further enrich the stew’s flavor profile.

Step 2

Step 3

Now it’s time to add the star ingredient: Cheonggukjang. Stir it in and let it simmer for another short while. Be careful not to overcook, as prolonged boiling can diminish the unique taste and aroma of Cheonggukjang. Simmer just long enough for the ingredients to meld together.

Step 3

Step 4

When the tofu starts to float to the surface, the stew is almost ready. Add the chopped green onion, minced garlic, and Korean green chili peppers for a touch of spiciness, and give it a quick stir. The pungent garlic and spicy chili peppers balance the savory richness of the Cheonggukjang, enhancing its overall aroma and flavor.

Step 4

Step 5

Your delicious and savory Cheonggukjang stew is now complete! Enjoy it with a hot bowl of rice. It’s a wonderfully hearty meal that will warm both your body and soul on a cold day.
