First, prepare about half a bag of bean sprouts. Rinse them thoroughly under running water. Bring a pot of water to a rolling boil, then add the bean sprouts and blanch for exactly 30 seconds. Boiling them for too long will make them mushy and lose their crunch, so be sure to time it carefully.

Immediately drain the blanched bean sprouts in a colander and briefly rinse them under cold running water to cool them down. This step helps preserve their crisp texture.
