Ingredients

  • Rice 1 and 1/2 cups (using a standard paper cup measure)
  • Hard-boiled sweet corn (as much as you prefer)
  • Water for cooking rice (measure as you normally would)

I had some leftover sweet corn from when I harvested it. Since it’s a busy farming season, I hadn’t been able to visit the fields, but when I brought it home and boiled it, it turned out harder than I anticipated. But don’t worry!

Actually, the harder the corn is, the more enjoyable the chewy texture is when cooked in rice. This texture is the very charm of corn rice!

Now, let me show you an easy way to separate the corn kernels. You only need a spoon you already have at home! A spoon with a squared-off handle is especially helpful as it allows for better leverage.

Place the corn cob on a flat surface. Insert the edge of the spoon between the kernels and push it ‘straight through’ along the cob. The kernels will separate easily, much like grains of rice.

Gently rinse the separated corn kernels under running water to remove any debris.

Portion out the corn kernels you plan to use soon, and store the rest in the freezer in convenient serving sizes. This way, you can easily grab what you need whenever you want to make corn rice again – very convenient!

Now it’s time to cook the rice. Wash the rice thoroughly and let it soak in water for about 10 minutes. Then, add water to the appropriate level as you normally would for cooking rice. Using a pressure cooker will result in an even chewier texture.

Add a generous amount of the prepared corn kernels to the rice and water mixture and cook the rice. Since I love corn so much, I often make a batch with lots of corn for myself and another with a moderate amount for my son! Feel free to adjust the corn quantity to your liking.
