While traditionally made with soaked Arborio rice, you can easily create a restaurant-quality risotto using leftover cooked rice or even microwaveable rice packs for a quick and convenient meal. Main Ingredients

  • 1.5 cups Cooked Rice (leftover or microwaveable)
  • 1/2 Tbsp Minced Garlic
  • 1/4 cup Finely Chopped Onion
  • 1 cup Milk
  • 1/2 cup Heavy Cream
  • 1-2 Tbsp Homemade Basil Pesto (adjust to taste)
  • 2 Tbsp Grana Padano Cheese (or Parmesan Cheese), grated

Cooking Instructions

In a wide pan, melt 1 piece of butter with 1 Tbsp of olive oil over medium-low heat. Using both butter and olive oil prevents the butter from burning and adds a richer flavor. Once the butter is melted, add the minced garlic and chopped onion, and sauté until they become translucent and fragrant. Be careful not to burn the garlic and onions.

Add the cooked rice to the pan and stir-fry. Sauté for 1-2 minutes, ensuring the rice is well combined with the sautéed garlic and onion. This step helps the rice absorb all the flavors.

Now it’s time to add the liquids. Pour 1 cup of chicken stock and 1 cup of milk over the sautéed rice. Bring to a boil over high heat, then reduce to medium-low. Let it simmer, allowing the rice to absorb the liquid. Cook for about 5 minutes, stirring occasionally, until the rice becomes tender.

Time to season! Add a pinch of salt, a pinch of white pepper, and a tiny pinch of nutmeg for added depth. Remember that basil pesto also contains salt, so season lightly at this stage and adjust later if needed.

For creaminess and richness, stir in 1/2 cup of heavy cream and 2 Tbsp of grated Grana Padano cheese (or Parmesan). Stir well until the cheese is melted and fully incorporated. The cheese will help thicken the risotto and enhance its flavor.

Once the risotto reaches your desired consistency, turn off the heat. Finally, stir in 1-2 Tbsp of your homemade basil pesto. Mix gently with the residual heat. You can adjust the amount of basil pesto to your liking. Serve hot and enjoy your delicious basil cream risotto!
