Main Ingredients- 1 cup rice (freshly cooked in a rice cooker)
- 2 cans (or equivalent) Spam or sausages
- 1 handful chopped green onions (approx. 3-4 Tbsp)
- 1 egg (for a runny yolk)
- 1 Tbsp cooking oil
- A pinch of sesame seeds
Seasoning- 1 Tbsp Gochujang (Korean chili paste)
- 1/2 Tbsp anchovy sauce (or fish sauce)
- 1 Tbsp soy sauce
- 1 Tbsp sesame oil
- 1/2 Tbsp sugar
- 1/2 Tbsp minced garlic
- 1 Tbsp Gochujang (Korean chili paste)
- 1/2 Tbsp anchovy sauce (or fish sauce)
- 1 Tbsp soy sauce
- 1 Tbsp sesame oil
- 1/2 Tbsp sugar
- 1/2 Tbsp minced garlic
Cooking Instructions
Step 1
First, cook 1 cup of rice in your rice cooker. Using the quick cook function (takes about 24 minutes) is efficient. You can also use leftover cooked rice, but freshly cooked warm rice will yield the best flavor! While this recipe is for one generous serving, feel free to reduce the rice portion if you prefer a smaller amount.
Step 2
Dice the Spam or sausages into small, bite-sized pieces (about 0.5cm thick). In a mixing bowl, combine the cooked rice, diced Spam/sausages, and the handful of chopped green onions. Mix them gently.
Step 3
Now, let’s prepare the seasoning for that delicious fried rice flavor. Combine 1 Tbsp Gochujang, 1/2 Tbsp anchovy sauce, 1 Tbsp soy sauce, 1/2 Tbsp minced garlic, 1 Tbsp sesame oil, and 1/2 Tbsp sugar in a small bowl. Add this seasoning mixture to the rice and ingredients in the mixing bowl. Gently mix everything together with your hands or a spatula until the seasoning is evenly distributed.
Step 4
Transfer the seasoned rice mixture back into the rice cooker. Select the ‘reheat’ or ‘cook’ function and set it for 9 minutes. Stir the rice occasionally during this time to prevent clumping and ensure even cooking.
Step 5
After 9 minutes, stir the rice well again. Then, use a spoon or spatula to create a small well in the center of the rice, big enough to hold an egg. If you want to cook two eggs, make two wells. Pour 1 Tbsp of cooking oil into the well(s).
Step 6
Carefully crack one egg into the center of the well(s). Try to pour the egg gently so the yolk doesn’t break.
Step 7
Close the rice cooker lid and set the ‘reheat’ or ‘cook’ function again for another 9 minutes. This will cook the egg to a perfect, slightly runny yolk. If you prefer your egg fully cooked (hard-boiled), you can turn off the rice cooker around the 7-minute mark.
Step 8
Once done, scoop the finished fried rice onto a plate. Sprinkle with a pinch of sesame seeds for an extra touch of flavor. Enjoy your delicious and easy Rice Cooker Spicy Spam Fried Rice!
