Main Ingredients- 300g fresh mussels
- 5 cloves garlic
- 2 stalks scallions
- 1/4 onion
- 10 cherry tomatoes
- 7 dried chili peppers (for a spicier kick, adjust to your preference)
- 3 tablespoons olive oil
- 1/4 cup white wine (using a paper cup as a measure)
- 2 tablespoons YeonDu Cheongyang Pepper Sauce (or your preferred spicy chili sauce)
Cooking Instructions
Step 1
First, thoroughly rinse the mussels under running water. Gently pull off and discard any beards (byssus threads) sticking out from the shells. Make sure to scrub off any dirt or grit attached to the shells.
Step 2
Let’s prepare the other ingredients. Finely mince the onion. Slice the garlic thinly into rounds. Halve the cherry tomatoes by removing their stems. Chop the scallions into bite-sized pieces.
Step 3
Place the halved cherry tomatoes into a plastic bag. Crush them gently with your hands or a rolling pin until they break down. This process will naturally release the tomato’s juices and pulp, creating a flavorful sauce base.
Step 4
Heat a wide pan or pot over medium-low heat. Add the olive oil, then add the sliced garlic and minced onion. Sauté until the onion becomes translucent and fragrant.
Step 5
Once the garlic and onion are fragrant, add the cleaned mussels and white wine to the pan. Turn the heat up to high and bring to a boil. The white wine helps to eliminate any fishy odors and enhances the overall flavor. As the mussels begin to open, stir in the crushed cherry tomatoes.
Step 6
Next, add the YeonDu Cheongyang Pepper Sauce. You can adjust the amount based on your preference for spiciness. This addition will make the broth wonderfully spicy and rich.
Step 7
When most of the mussels have opened their shells, they are almost cooked. Just before turning off the heat, stir in the chopped scallions. Your delicious Tomato and Mussel Stew is now ready!
Step 8
Serve the piping hot Tomato and Mussel Stew with crusty baguette slices or crackers for dipping. The savory broth is perfect for soaking into the bread, or you can top the bread with the tender mussel meat. This dish makes an excellent appetizer or accompaniment to wine for a special home party!
