We’ve added aromatic perilla leaves and crispy seasoned seaweed to the savory perilla oil and flavorful soy sauce dressing for an enhanced taste. It’s so easy to follow, making it highly recommended for those living alone or busy professionals!

Basic Ingredients

  • 1 serving of somyeon noodles (approx. 100g)
  • 10 young perilla leaves (or shiso leaves)
  • 1 sheet of seasoned seaweed (or roasted seaweed)

First, to add an aromatic touch to our noodles, wash the young perilla leaves thoroughly, pat them dry, and then thinly slice them into bite-sized pieces. (Using perilla leaves instead of shiso leaves will also be very delicious!)

Shall we make the key dressing for these noodles, the perilla oil soy sauce dressing? Using Koji soy sauce, which has a subtle malt aroma, allows for a remarkably simple yet deeply flavorful result. If you don’t have Koji soy sauce, you can use a savory brewed soy sauce.

The most important step for delicious noodles: cooking them! While the noodles are boiling, you can quickly make the dressing to save time. Add the somyeon noodles to a generous pot of boiling water and cook for the time indicated on the package, or about 3-4 minutes.

Once the noodles are cooked, drain them in a colander and rinse them thoroughly under cold water. This step makes the noodles springy and prevents them from becoming mushy. After rinsing well in cold water, drain them again in the colander to remove all excess moisture.

Now, to the prepared noodles, add 1 tablespoon of savory perilla oil, 1 tablespoon of sesame seeds, and 2 tablespoons of Koji soy sauce. Gently toss everything together to coat the noodles evenly. Mix well so the dressing is absorbed into the noodles. If it’s not seasoned enough for your liking, you can add a little more soy sauce.

Isn’t this incredibly simple? Even just mixing the noodles with the dressing alone creates a fantastic taste with the rich aroma of perilla oil and the savory soy sauce that fills your mouth. This alone makes a wonderful meal.

Finally, generously top the noodles with the thinly sliced perilla leaves and crumble 1 sheet of seasoned seaweed over them as a garnish. I find that seasoned seaweed pairs particularly well with perilla oil soy sauce noodles because it’s already seasoned. The crispy texture and umami it adds make it even more delicious! (You can also lightly toast and crumble regular seaweed.)
