Main Ingredients- 2-3 sheets of square fish cakes
- 1 piece of radish (approx. 100g)
- 1 handful of minari (water parsley, approx. 50g)
- 1/2 stalk of green onion
- 1 chili pepper (optional)
- 1 Tbsp red pepper flakes
- Soup soy sauce or fish sauce (for seasoning)
Cooking Instructions
Step 1
First, wash all your vegetables thoroughly. Slice the radish into thin, bite-sized pieces (like half-moons). Chop the green onion diagonally, and finely mince the chili pepper if you’re using it for a spicy kick. Cut the minari into manageable lengths, about 3-4 cm. Slice the fish cakes into your preferred pieces, typically into 2 or 3 parts.
Step 2
In a pot, pour in 5 cups (about 1L) of water and add the sliced radish first. If you’re using a commercial fish cake soup liquid sachet, add it now and stir well to combine with the water. If not using a sachet, you’ll adjust the seasoning later with soup soy sauce or fish sauce. Let the radish simmer over medium heat until it becomes slightly translucent, allowing its refreshing flavor to infuse the water.
Step 3
Once the radish is partially cooked, add the sliced fish cakes and green onions to the pot. Stir in 1 tablespoon of red pepper flakes to give the broth a pleasant spiciness. For an extra kick, add the minced chili pepper at this stage. Season the broth by adding a little soup soy sauce or fish sauce. It’s important to taste as you go rather than adding too much at once.
Step 4
Finally, add the prepared minari and let it simmer for just 1 minute. Minari loses its fragrant aroma and becomes mushy if overcooked, so the key is to cook it briefly until it just wilts. Once the minari is added and it comes to a brief boil, your delicious Minari Fish Cake Soup is ready! Enjoy it piping hot.
