  • 1 handful ripe sour kimchi (approx. 150g)
  • 1 strip thick-cut bacon (approx. 50g)
  • 1/4 green onion (mostly white parts)
  • 2 fresh eggs
  • 4 sheets seasoned seaweed (lunchbox type)

Seasoning & Others

  • 1 Tbsp sesame seeds
  • 2 Tbsp olive oil (1 Tbsp for stir-frying, 1 Tbsp for frying eggs)

The key to great Kimchi Fried Rice is the kimchi! Prepare your ripe, sour kimchi and cut it into bite-sized pieces (about 1-2 cm). If your kimchi is too sour, you can add a little sugar.

Finely chop the green onion or slice it into long strips. Cut the bacon into strips similar in length to the kimchi for a pleasant chew.

Heat 1 tablespoon of olive oil in a pan over medium heat. Add the chopped green onion and sauté until fragrant, releasing its aroma. Once the scallion oil forms, add the bacon and cook until golden brown and slightly crispy, rendering its fat.

Now, add the chopped kimchi to the pan and stir-fry until all the ingredients are well combined. Continue to cook until the kimchi softens and becomes tender, about 5-7 minutes. Reduce the heat to medium-low to prevent burning.

Add two bowls of warm cooked rice to the pan. Use a spatula to gently break up any clumps and mix the rice thoroughly with the kimchi, bacon, and green onion mixture. Ensure each grain of rice is coated for maximum flavor. Stir-fry evenly.

For an added crispy texture, finely snip the seasoned seaweed sheets with scissors directly over the fried rice. Gently mix it in with the rice. The seaweed flakes will add a wonderful savory flavor.

Now, let’s prepare the fried eggs to accompany the rice. Heat 1 tablespoon of olive oil in a clean pan over medium-low heat. Crack the eggs into the pan. Once the edges begin to set, cook according to your preference. For a sunny-side-up egg, cook until the whites are set, leaving the yolk runny. For a well-done egg, carefully flip it and cook the yolk through.
