The key to great guacamole is fresh ingredients! Prepare ripe avocados, crisp onions, and fresh tomatoes. Avocados are best when they yield slightly to gentle pressure.

Cut the ripe avocados in half, remove the pits, and scoop the flesh into a bowl. Use a fork or potato masher to gently mash the avocado. If there are any firmer, less ripe parts, finely dice them and mix them in for added texture. Avoid mashing too smoothly; leaving some chunks enhances the bite.

Remove the stem from the tomatoes. Discard the seedy core and finely dice the outer flesh and skin. If your tomatoes are very soft and mushy like the one shown, it’s better to use slightly underripe, firmer tomatoes. Firmer tomatoes will give your guacamole a better texture.
