- 1 Tbsp Minced Garlic
- 1 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Gochugaru (Korean chili flakes)
- 1/3 Tbsp Doenjang (Korean soybean paste)
- 4 Tbsp Soy Sauce
- 1 Tbsp Sugar
- 1 Tbsp Minced Garlic
Cooking Instructions
Step 1
First, prepare the main ingredients. Peel the potatoes and onion, then cut them into roughly 1cm thick, bite-sized pieces. You can substitute sweet potatoes for regular potatoes if you prefer! Finely chop the green onion and Cheongyang peppers to add fragrance.
Step 2
Here’s Chef Baek’s special tip! To enhance the flavor of the stew, place the Spam in a plastic bag and mash it with your hands, or dice it into bite-sized pieces. Mashing it allows the flavor to meld beautifully into the broth. Choose your preferred method!
Step 3
In a pot or wok with deep sides, combine the cut potatoes, onion, chopped green onion and peppers, prepared Spam, and all the seasoning ingredients. Mix everything together thoroughly with a spatula or spoon until well combined.
Step 4
Once all ingredients and seasonings are mixed, pour in 3 cups of water (measured with a paper cup). The water should be enough to mostly cover the ingredients. Now, get ready to cook over high heat.
Step 5
Place the pot on high heat and bring to a boil uncovered. Once the stew starts to vigorously boil, reduce the heat to low. Cover the pot and let it simmer until the potatoes are tender and the stew has thickened, about 10-15 minutes. If the stew becomes too dry during cooking, add a little more water.
Step 6
When the potatoes are cooked through and the stew has reached a nice, thick consistency, your delicious Chef Baek-style potato stew is ready! Serve it generously over a bowl of hot rice for a fantastic meal.
Step 7
Take a bite, and you’ll be delighted by the perfect harmony of soft, fluffy potatoes and savory Spam. Mixing the stew with hot rice is an absolute delight – truly heavenly! This is a perfect dish to accompany your rice, so be sure to try making it.
