Cooking Instructions

First, soak the pork ribs in cold water for about 30 minutes to remove any blood. This step is crucial for a clean, un-gamey flavor. After draining, pat them dry. In a bowl, combine the ribs with 2 pinches of salt, a pinch of pepper, and 1 tablespoon of cooking wine or Mirin. The wine helps tenderize the meat and eliminate any unpleasant odors. Mix well to ensure the seasoning is evenly distributed.

Arrange the seasoned pork ribs in a single layer in your air fryer basket. Preheat your air fryer to 180°C (350°F) and air fry for 10 minutes. This initial cooking helps to seal in the juices, ensuring the ribs remain moist and tender inside.

While the ribs are pre-cooking, prepare the potatoes. Peel them and cut them into bite-sized wedges or chunks, about 2-3 cm thick. Lightly season the cut potatoes with a pinch of salt. Place these seasoned potatoes in the lower rack of the air fryer basket alongside the ribs. The potato will absorb some of the delicious rib drippings as it cooks, becoming extra flavorful.

Continue to air fry at 180°C (350°F) for an additional 10 minutes, or until the ribs are cooked through and nicely browned, and the vegetables are tender. The total cooking time is approximately 20-25 minutes. Cooking times may vary depending on your air fryer model, so adjust as needed.
