Main Ingredients

  • Pork shoulder 600g
  • Gara-mandeun Bae drink 238ml
  • 1 Onion
  • 1 Green onion

Ryu Soo-young’s Stir-fry Marinade

  • Sugar 4 Tbsp
  • Vinegar 4 Tbsp
  • Gochujang (Korean chili paste) 3 Tbsp
  • Soy sauce 2 Tbsp
  • Minced garlic 1 Tbsp
  • Minced ginger 0.5 Tbsp
  • Sesame oil 0.5 Tbsp
  • Pinch of black pepper

Cooking Instructions

Step 1

First, prepare the vegetables. Wash the onion, peel it, and slice it thinly into strips. Wash the green onion thoroughly, and cut it diagonally into about 1cm thick pieces, using both the white and green parts.

If there is any blood on the pork shoulder, pat it dry thoroughly with paper towels. Removing excess blood is key to a clean-tasting stir-fry without any gamey odor.

In a large bowl, place the pork shoulder. First, pour in Chef Ryu Soo-young’s secret ingredient, the ‘Gara-mandeun Bae’ drink (238ml). Next, add 4 Tbsp of sugar, 4 Tbsp of vinegar, 3 Tbsp of gochujang, and 2 Tbsp of soy sauce. Then, add 1 Tbsp of minced garlic, 0.5 Tbsp of minced ginger, and a pinch of black pepper. Add all the marinade ingredients to the bowl.

Gently mix all the marinade ingredients with the pork by massaging it with your hands. Ensure the marinade coats every piece of meat evenly.

Cover the marinated pork with plastic wrap or a lid, and let it rest in the refrigerator for at least 30 minutes. For an even deeper flavor, marinating for an hour or longer is recommended.

Now it’s time to stir-fry. Heat a pan over medium heat, then add all the marinated pork. Break up any clumps of meat with chopsticks or a spatula as it cooks. Once the pork is no longer pink and the sauce has begun to thicken and coat the meat, proceed to the next step.

When the pork is partially cooked, add the sliced onion and diagonally cut green onion. Increase the heat to high and stir-fry quickly until the onions become translucent and slightly softened. Be careful not to overcook the vegetables until they become mushy.

Once all ingredients are well-stirred and cooked, turn off the heat. Finally, drizzle in 0.5 Tbsp of sesame oil and give it a quick toss to enhance the aroma.
