- 2 Tbsp Oligosaccharide (or corn syrup)
- 1 Tbsp Sugar
- 1 Tbsp Minced garlic
- Pinch of Black pepper
Cooking Instructions
Step 1
Let’s start preparing the ingredients for a delicious braised beef! First, have your hard-boiled eggs ready and peeled. It’s also recommended to pre-boil the beef intended for braising.
Step 2
Peel the onion and cut it in half. Then, slice it into pieces that are easy to eat or look appealing in the braised beef, about 0.5cm thick.
Step 3
Wash the green onion stalk thoroughly under running water. Slice the white and green parts into roughly 5cm lengths. Cutting them this large helps them maintain their shape during cooking and infuses the braise with a pleasant aroma.
Step 4
Now, let’s make the braising sauce that will define the flavor of our dish. Measure 200ml of water (about 1 paper cup) and 80ml of soy sauce into a measuring cup. While a 1:2 ratio of soy sauce to water is common, you can add a bit more soy sauce if you prefer a more concentrated flavor and less liquid. (Tip: If measuring is difficult, using half a cup of soy sauce as a base and adding one cup of water will give you a similar consistency.)
Step 5
Pour the prepared soy sauce and water into the pot you’ll be using for braising. Having the sauce ready beforehand makes it convenient to add all ingredients and start cooking at once.
Step 6
Add the seasonings that will enhance the sweetness and savory notes. First, add 2 tablespoons of oligosaccharide for a glossy finish, followed by 1 tablespoon of sugar to balance the sweetness. Stir in 1 tablespoon of minced garlic for a rich aroma, and finally, sprinkle a pinch of black pepper to eliminate any gamey odors.
Step 7
Now, place all the prepared ingredients into the pot. Arrange the boiled beef, eggs, and sliced onion and green onion neatly over the braising sauce.
Step 8
Bring the pot to a boil over high heat. Once boiling, reduce the heat to medium-low and simmer for about 10 minutes. Gently stir occasionally to ensure the ingredients absorb the sauce evenly. As the liquid reduces, the flavors will deeply penetrate the ingredients.
Step 9
Your delicious braised beef is now ready! It’s best to let the eggs cool slightly before cutting them into serving-sized pieces to prevent them from crumbling. The moist braised beef with its savory sauce is perfect served over rice. Feel free to add quail eggs or chili peppers according to your preference!
