Bowl Ingredients

  • Tofu 200g (water squeezed out)
  • 1 Fresh Egg
  • 1 Pinch of Salt
  • 150g Ground Beef
  • 20g Green Onion
  • 30g Onion
  • 1/2 Tbsp Minced Garlic
  • 40g Chives
  • A little Sesame Seeds
  • A little Extra Virgin Olive Oil

Bulgogi Marinade

  • 1 Tbsp Soy Sauce
  • 1/2 Tbsp Allulose
  • 1/2 Tbsp Cooking Wine
  • 1/2 tsp Anchovy Sauce
  • A little Ginger (grated or minced)
  • A little Black Pepper

Cooking Instructions

Step 1

Start by thoroughly draining the 200g of tofu. Wrap it in paper towels and press out as much moisture as possible. This is crucial for achieving a crumbly, ‘soboro’ texture when stir-frying.

Finely chop the 20g of green onion, 30g of onion, and 40g of chives. Prepare these aromatic vegetables for stir-frying.

In a small bowl, combine the bulgogi marinade ingredients: 1 Tbsp soy sauce, 1/2 Tbsp allulose, 1/2 Tbsp cooking wine, 1/2 tsp anchovy sauce, and a pinch of ginger. Mix well and set aside. Pre-mixing the sauce makes the cooking process smoother.

Crack the fresh egg into a separate bowl. Add 1 pinch of salt and lightly whisk until combined. This will be cooked with the tofu to add a fluffy texture.

Take the drained tofu and mash it well in a bowl. Use a fork or your hands to break it down into small, even crumbles. Ensure there are no large chunks left.

Heat a non-stick skillet over medium heat and add a little olive oil. Add the mashed tofu and stir-fry for about 2-3 minutes, or until most of the moisture has evaporated and the tofu starts to look slightly crumbly and toasted. This step helps dry out the tofu, giving it a better texture.

Add a little more oil to the skillet if needed. Pour in the whisked egg and let it set slightly for a few seconds. Then, scramble it into small pieces and cook for 1-2 minutes until just cooked through.

Wipe the skillet clean or use a separate one. Heat a little oil over medium heat and add the chopped green onions. Sauté for 1-2 minutes until fragrant, creating a flavorful green onion oil base.

Add the 150g of ground beef to the skillet. Stir-fry, breaking up any clumps, until the beef is no longer pink, about 2-3 minutes.

Add the chopped onion (30g) and minced garlic (1/2 Tbsp) to the skillet. Continue to stir-fry for another 1-2 minutes until the onions are translucent and the garlic is fragrant.

Pour in the prepared bulgogi marinade. Cook, stirring occasionally, until the sauce has thickened and coated the meat and vegetables beautifully. Once reduced, turn off the heat and sprinkle with fresh black pepper.
