Main Ingredients

  • 1 package Enoki mushrooms (approx. 100g)
  • 90g Bacon (pork belly or thick-cut bacon)
  • 2 Fresh eggs
  • A small amount of scallions (approx. 20g)

Seasoning

  • Pinch of black pepper
  • Pinch of salt

Cooking Instructions

Step 1

First, trim about 1cm off the base of the enoki mushrooms. Gently rinse them under running water, lightly squeeze out excess moisture by hand, and then chop them into bite-sized pieces (about 2-3cm long), keeping them loosely bundled. Place the chopped enoki mushrooms in a large bowl. Finely chop the scallions and add them to the bowl.

Cut the bacon into roughly 1cm thick pieces. (You can cut them thinner if you prefer.) Add the cut bacon to the bowl with the enoki mushrooms.

Now, crack 2 eggs into the bowl. Sprinkle in a pinch of black pepper for extra flavor. Add a very small amount of salt to season. (Consider the saltiness of the bacon and adjust the salt quantity accordingly.)

Using chopsticks or a whisk, gently mix all the ingredients in the bowl until well combined. It’s important to ensure the enoki mushrooms, bacon, scallions, and egg mixture are evenly distributed without clumping.

Heat a non-stick pan over medium heat and add enough cooking oil. Using a ladle or spoon, scoop portions of the mixture and carefully drop them onto the hot pan to form round pancakes. Reduce the heat to low and cook slowly to prevent burning. You can adjust the size of the pancakes according to your pan’s size.

Once one side is golden brown, carefully flip the pancake with a spatula and cook the other side until it’s also golden brown and crispy. Transfer the perfectly cooked, crispy Bacon Enoki Mushroom Pancakes to a serving plate. They are best enjoyed immediately while still warm!
