Hearty and Delicious Mandu Jeongol (Korean Dumpling Hot Pot)
Warm up on a chilly day with this savory and spicy Mandu Jeongol – a perfect recipe for a nourishing meal!
For my husband who absolutely loves dumplings, I’m making the ultimate dumpling dish: Mandu Jeongol! It’s a truly satisfying meal.
Main Ingredients- Frozen dumplings, as needed
- Mushrooms (shiitake, enoki, king oyster, etc.)
- 1 onion
- Bulgogi-style sliced beef or pork
- 1/2 zucchini
- Well-fermented kimchi, as needed (or regular kimchi)
- Tteokbokki rice cakes, as needed
- 1 Tbsp dried anchovy powder
Seasoning- 2 Tbsp red pepper flakes (gochugaru)
- 2 Tbsp soy sauce for soup (guk-ganjang)
- 1 Tbsp minced garlic

Cooking Instructions
Step 1
Start by arranging the frozen dumplings at the bottom of your hot pot. Lay them out neatly to create a flavorful base for the broth.
Step 2
Next, layer the prepared ingredients on top of the dumplings. Add your favorite mushrooms (shiitake, enoki, or king oyster mushrooms add great flavor), sliced zucchini, bulgogi-style meat, and sliced onion. You can also add tteokbokki rice cakes for extra texture and enjoyment.

Now, let’s make the delicious seasoning paste. In a small bowl, combine 2 tablespoons of gochugaru (Korean red pepper flakes), 2 tablespoons of guk-ganjang (soy sauce for soup), and 1 tablespoon of minced garlic. Mix them thoroughly until well combined. This paste will give our hot pot its signature savory and slightly spicy kick.
Step 4
Evenly spoon the prepared seasoning paste over all the ingredients in the pot. Make sure it’s distributed well so every bite is flavorful.
Step 5
Time to add the liquid and cook! Pour enough water into the pot to just cover the ingredients. Add your well-fermented kimchi, cut into bite-sized pieces, to the pot – this will add a wonderful tangy depth to the broth. Bring the pot to a boil over high heat. Once boiling, stir in 1 tablespoon of dried anchovy powder, which enhances the umami flavor. Reduce the heat to medium-low, cover the pot, and let it simmer gently until all the ingredients are tender and fully cooked. Enjoy your delicious Mandu Jeongol!
