  • Cooking : Boil / Simmer
  • Servings : 2 servings
  • Cooking Time : Within 60 minutes
  • Difficulty : Beginner

Main Ingredients

  • 250g beef (stew meat, recommended: small pieces like goulash cut)
  • 10g dried seaweed (miyeok)

Seasoning & Others

  • 2 Tbsp Mirin (rice wine)
  • 3 Tbsp Sesame Oil
  • 1 Tbsp Minced Garlic
  • 2 Tbsp Soy Sauce (for soup)
  • 0.5 Tbsp Fish Sauce (or anchovy sauce)
  • 0.3 Tbsp Salt (adjust to taste)
  • 1.5 L Water
  • Perilla Seed Powder (optional, to taste)

Cooking Instructions

Step 1

First, soak the dried seaweed in cold water for about 30 minutes until fully rehydrated. Drain the seaweed thoroughly using a sieve. Be careful not to soak it for too long, as it can become mushy.

Step 1

Step 2

Pat the beef dry with paper towels to remove as much blood as possible. Place paper towels both above and below the beef and press down gently to effectively absorb the blood.

Step 2

Step 3

In a small bowl or plastic bag, combine the blood-free beef with 2 tablespoons of Mirin. Gently massage it into the meat. This step helps to tenderize the beef and remove any unwanted gamey odors.

Step 3

Step 4

Heat 2 tablespoons of sesame oil in a large, deep pot over medium-high heat. Add the marinated beef and stir-fry until it’s lightly browned on all sides. Searing the beef enhances its flavor.

Step 4

Step 5

When the beef is about halfway cooked, add the drained seaweed to the pot. Continue stir-frying along with 1 tablespoon of minced garlic and the remaining 1 tablespoon of sesame oil. This step melds the flavors of the beef and seaweed.

Step 5

Step 6

Pour in 1.5 liters of water and bring the soup to a rolling boil over high heat. Once boiling, reduce the heat to medium and let it simmer gently. This allows the ingredients to meld together, creating a rich broth.

Step 6

Step 7

Once the soup has simmered and the flavors have developed, season it with 2 tablespoons of soy sauce, 0.3 tablespoons of salt, and 0.5 tablespoons of fish sauce. Taste and adjust the seasoning as needed according to your preference.

Step 7

Step 8

Finally, for an extra nutty aroma and flavor, stir in a generous amount of perilla seed powder (if using) and simmer for another minute. Your delicious Beef and Seaweed Soup is ready to be enjoyed with a bowl of hot rice!
