First, prepare the pork neck. Cut it into thick, bite-sized pieces, about 1 to 1.5 cm thick. This thickness will give you a more satisfying texture.

Heat a pot and add 2 tablespoons of perilla oil. Add the sliced pork neck and stir-fry until it’s nicely browned. Stir-frying until the surface is lightly golden will bring out its flavor.

Once the pork is somewhat cooked, generously add 3 tablespoons of gochujang. Stir-fry it with the pork so the paste coats the meat evenly. This will allow the seasoning to deeply penetrate and make the stew much tastier.

Quickly stir-fry the gochujang and pork neck over medium heat, making sure not to burn the gochujang. As the savory aroma of the gochujang rises and the ingredients become slightly crispy, you’ll create an even more delicious stew.
