Tangsuyuk Ingredients

  • 300g Pork Tenderloin
  • 1 cup Glutinous Rice Flour
  • 1/2 cup Potato Starch
  • 1/4 cup Water
  • Pinch of Black Pepper
  • Generous amount of Cooking Oil

Pork Seasoning

  • 1/2 tsp Salt
  • Pinch of Black Pepper

Cooking Instructions

Step 1

First, slice the pork tenderloin into 1cm thick pieces and pat dry with paper towels to remove excess blood. Then, cut them into thin, flat pieces. Season the sliced pork with salt and pepper and gently mix. In a wide bowl, thoroughly mix the glutinous rice flour and pepper. Coat each piece of seasoned pork evenly on both sides with the glutinous rice flour mixture. Ensuring the flour adheres well will make the fried Tangsuyuk extra crispy.

Now, let’s make the glutinous rice flour batter. In a bowl, combine the glutinous rice flour, potato starch, and water. Mix until you achieve a slightly thick batter that will coat the pork pieces well without being too runny. (Adjust the water quantity for desired consistency.) Dip the flour-coated pork pieces into the batter, ensuring they are evenly coated.

Heat a generous amount of cooking oil in a deep pan to about 170°C (340°F). (You can test the temperature by inserting a wooden chopstick; if bubbles form around it, the oil is ready.) Carefully add the batter-coated pork pieces one by one into the hot oil. Fry over medium-high heat until golden brown and crispy.

Once fried, remove the Tangsuyuk pieces and let them drain on a wire rack for a moment to cool slightly. After letting them cool for a bit, reheat the oil to about 180°C (355°F) and fry the Tangsuyuk one more time. This double-frying step is the key to achieving extra crispy Tangsuyuk.

Leftover Tangsuyuk can be cooled and stored in the freezer. When you want to enjoy it, place it in an air fryer and cook at 180°C (355°F) for 5-7 minutes. This will remove excess oil and bring back its crispiness, just like when it was freshly fried.
