  • 2/3 cup almonds (approx. 100g)

First, prepare the peanuts by thoroughly shelling them. If you find any peanuts with remaining dark skins, carefully remove them.

To remove any astringency and soften the nuts, place the prepared peanuts in plenty of water and boil for about 5 minutes. This pre-boiling step eliminates the nuts’ natural astringent taste, resulting in a much more pleasant flavor.

During the last minute of boiling the peanuts, add the almonds to blanch them together. Be careful not to overcook them, as they can become mushy. After boiling, quickly rinse the peanuts and almonds under cold water and drain them thoroughly in a colander. Remaining water can make the simmered dish watery.

Heat 1 tablespoon of cooking oil in a pan over medium-low heat. Add the drained peanuts and almonds and stir-fry for 1-2 minutes until fragrant. This step enhances the nutty aroma. Now, combine the soy sauce, soup soy sauce, water, black raspberry wine (or cooking wine), onion syrup (or plum extract), and muscovado sugar (or brown sugar) in the pan. Bring to a simmer over medium heat, stirring occasionally to allow the seasoning to penetrate the nuts.

As the sauce thickens and the nuts begin to look glossy, reduce the heat to low. At this stage, add 1-2 tablespoons of corn syrup or maltose to enhance the sweetness and achieve a beautiful, appetizing shine. Continue to simmer over low heat, stirring constantly to prevent burning, until the sauce reaches your desired consistency.
