  • 1 handful Dried Pollock (Hwangtae) strips (approx. 30g)
  • 1/4 Korean radish (Daikon radish, approx. 200g)
  • 1/4 stalk Scallion (Green onion)
  • 1/2 Tbsp Soy sauce for soup (Gukganjang) or Salt (adjust to taste)
  • 1 Tbsp Sesame oil
  • 600ml Anchovy-Kelp Broth (or 600ml water + 1 broth pack)
  • 1 tsp Dried anchovy powder (optional)

Cooking Instructions

Step 1

First, soak the dried pollock strips in cold water for about 10 minutes until they become soft and pliable. Once rehydrated, gently squeeze out excess water and cut them into bite-sized pieces. This step helps to make the broth clearer.

Peel and thoroughly wash the Korean radish, then thinly slice it into matchsticks. Finely chop the scallion. Cutting the radish thinly ensures it cooks evenly and tenderly in the soup.

Heat 1 tablespoon of sesame oil in a pot over medium-low heat. Add the prepared dried pollock strips and stir-fry for about 1-2 minutes. This process removes any fishy odor and adds a nutty aroma to the soup.

Once the pollock is fragrant, add the julienned radish to the pot and continue to stir-fry together. Cook for about 2-3 minutes, or until the radish becomes slightly translucent. Stir-frying the radish beforehand helps to draw out its natural sweetness, enriching the broth’s flavor.

Pour the 600ml of anchovy-kelp broth (or water and broth pack) into the pot with the stir-fried pollock and radish. Add 1/2 tablespoon of soup soy sauce or salt to season. It’s best to season gradually and adjust the taste after the soup has simmered.

Bring the soup to a boil, then reduce the heat to medium-low and simmer for about 5-7 minutes, or until the radish is tender and translucent. Add the chopped scallions and let it simmer for another minute. Finally, stir in 1 teaspoon of dried anchovy powder for an extra boost of umami. The anchovy powder is optional but highly recommended for a richer taste.
