Spicy and Hearty Sundae-guk (Korean Blood Sausage Soup) Recipe

My mother-in-law kindly bought me a delicious pouch of beef bone broth, so I decided to make Sundae-guk for my husband who loves hearty soups! 😀

Main Ingredients

  • 2 packs of pre-made beef bone broth (each 1L)
  • 1 pack of sundae (Korean blood sausage, approx. 300-400g)
  • 3 handfuls of green onions, chopped

Seasoning & Extras

  • 1 Tbsp Mala sauce (adjust to taste)
  • 6 Tbsp perilla seeds (ground)
  • Salt to taste

Cooking Instructions

Step 1

First, prepare your ingredients: 2 packs of beef bone broth and 1 pack of sundae. If your broth is frozen, thaw it beforehand. For the sundae, you can choose any brand or type you prefer, whether it’s standard or a milder version.

Pour the thawed beef bone broth into a pot and bring it to a boil over high heat. Once it’s boiling vigorously, add 1 tablespoon of Mala sauce and stir well to combine. The Mala sauce will add a pleasant spiciness and depth of flavor. (Feel free to add more if you enjoy a spicier kick.)

While the broth is boiling, add the generously chopped green onions. The refreshing and slightly sweet flavor of the green onions will infuse into the broth, creating a richer taste.

Grind the perilla seeds using a blender or mortar and pestle. It’s best not to grind them too finely; a slightly coarse texture adds a nice mouthfeel and nutty flavor. If you prefer a finer powder, that’s perfectly fine too.

Add the ground perilla seeds to the pot and let it simmer for a little while longer. Stir occasionally to ensure the perilla seeds are well incorporated into the soup. Just before serving, season with salt to your preference. Your delicious Sundae-guk is ready to be enjoyed with a hot bowl of rice!
