Making Chwinamul Rice with Dried Chwinamul
Enjoy a unique and flavorful rice dish made with fragrant dried chwinamul. This chwinamul rice is a special treat that fills your palate with the fresh aroma of spring.
Ingredients- 200g dried chwinamul (Korean aster)
- 1.5 Tbsp soup soy sauce (guk-ganjang)
- 1 Tbsp perilla oil (deul-gireum)
- Rice for 4 servings
Cooking Instructions
Step 1
First, soak the dried chwinamul in water until the leaves unfurl completely. Let it soak for at least 2 hours, then blanch it in boiling water until tender. Rinse it thoroughly several times and squeeze out excess water before use.
Step 2
Now, prepare for cooking the chwinamul rice. Cut the rehydrated chwinamul into bite-sized pieces. Place the chwinamul in a bowl, add 1.5 Tbsp of soup soy sauce and 1 Tbsp of perilla oil. Gently mix and massage the ingredients together to allow the seasoning to penetrate the chwinamul.
Step 3
When using an electric pressure cooker, it’s best to use slightly less water than you normally would for rice. Since the chwinamul may release some moisture, be mindful of the water level.
Step 4
Cooking on the white rice high-pressure setting takes about 35 minutes. You can also use the multi-grain setting, but today we’ll use the white rice function. Once cooked, you’ll have delicious chwinamul rice ready to enjoy. The aroma of the chwinamul as the rice cooks is truly delightful.
