Cooking Instructions
Step 1
First, place the ring-cut squid in a pan over medium heat and stir-fry briefly. Only cook until the surface of the squid changes color slightly and it’s no longer raw. This prevents the squid from becoming tough and keeps it tender.
Step 2
While the squid is cooking, add the sliced onion and large-cut green onion to the pan and stir-fry together. Sauté until the onions become translucent and the green onions release their aroma. This allows the vegetables’ flavor to infuse into the squid, making it even more delicious.
Step 3
Once the squid’s outer surface has slightly changed color and appears cooked, add the thoroughly rinsed and drained bean sprouts. Be careful not to overcook the bean sprouts after adding them; maintaining their crisp texture is key.
Step 4
Add all the prepared spicy-sweet sauce ingredients and stir-fry quickly over high heat. Using two spoons while stir-frying helps to mix the ingredients evenly and coat them thoroughly with the sauce. Stir-frying rapidly over high heat prevents the bean sprouts from becoming mushy and preserves their crispness.
Step 5
As the bean sprouts begin to cook, gradually add the pre-mixed potato starch slurry while stirring to achieve the desired consistency. You’ll find that the moisture released from the bean sprouts and squid is often enough, so additional water might not be necessary. Stir continuously after adding the starch slurry as it simmers to create a thick and flavorful sauce.
Step 6
Serve your delicious stir-fried squid and bean sprouts warm, perhaps over a bowl of rice, or enjoy it as a side dish! The combination of the spicy-sweet sauce, crisp bean sprouts, and chewy squid is so satisfying that you’ll finish a whole bowl of rice in no time.
